The default compression quality is set too low.
Description
The default compression type is JPEG with a quality value less than 30. This is a fairly low compression quality, and the imagery may not display well because of compression artifacts.
Solution
In the mosaic dataset default properties, edit the Default Compression Quality to be greater than 30.
